Of summer's many lovely qualities, the abundance of fresh peaches (and nectarines!) is high on my list.  Unfortunately, I'm terrible at gauging how quickly we'll eat the fruit and so often I buy more than we can consume before the fruit spoils.  Last week my mother-in-law gave me a bag of beauties, and I was determined to get creative. The result?  A new peach salsa recipe! The approach is very similar to the ceviche recipe I make, so the list of ingredients will look familiar.  Here's what you need:

  • 3 fresh peaches, diced
  • 1/2 red onion, diced
  • 1/2 avocado, diced
  • 2-3 limes
  • 2 Tablespoons fresh mint, finely chopped
  • 1/8 cup feta cheese
  • 1 tsp Tapatio (or to taste)

In a medium bowl, place the onions and mint.  Dice the peaches to a medium cut.  Be sure to use fruit that is ripe, but not mushy.Next, juice the limes over the fruit, onions, and mint.  Stir everything together so the ingredients are well coated. Do you have one of these handy juicers?  I LOVE mine!! I have the "orange" size, but I use it for lemons and limes as well.  (I'm a rule breaker that way!)Gently stir in the feta cheese.Dice your avocado.  In case you don't know the super easy way to do this, here are two visuals.  The key to getting a nicely diced avocado is to do the work while the fruit is in the skin.  You'll start by making two slices; one through the length and one through the width of the fruit. Next, slice sideways through the fruit - at a 45 degree angle - so that the pieces are consistently small.  Then just scoop the fruit from the skin. Voila!Put the avocado in the bowl with the other ingredients and stir gently.Add a spring of mint to the corner of the bowl if you decide to "go public" with the dish and be fancy pants!  The salsa can be served with chips or it also makes a great topping for grilled meat.  We used it for our fresh-off-the-grill skirt steak.
