White Chocolate & Cranberry Shortbread Cookies

Picture a roaring fire, a great book, and a shortbread cookie with white chocolate and craisins begging to be eaten with a cup of tea (or coffee if that's your caffeine of choice!). This is one of my favorite fall activities!

My friend Sue makes these scrumptious little morsels that not only are easy to make, they are festive to boot.  They are also rich and addictive so be warned -- make them for sharing!  Here's what you need for a single recipe, but this recipe doubles easily:

  • 1 cup softened butter
  • 1/2 cup sugar
  • 2 cups flour
  • 1/2 tsp vanilla
  • 1/4 cup dried cranberries
  • 1/4 cup chopped white chocolate baking squares (I've been known to substitute white chocolate chips, so feel free!)

Begin by whipping the butter, vanilla, and sugar together.Add the flour and continue mixing.Stir in the dried cranberries and white chocolate.Drop by teaspoonfull onto a cookie sheet and bake for 11-14 minutes in a 350 degree oven.  Allow cookies to cool for at least 5 minutes before removing from the cookie sheet.Enjoy!
