Super Easy Corn Salsa

For those of us with little to no allegiance to a Superbowl team, tomorrow afternoon is really about snacking and watching commercials.  If you are hosting a party or attending one and need something REALLY easy for all of those chips, the recipe below is for you.  (Thanks Lisa for sharing!!) Here's what you need:

  • 2-3 cups corn (fresh or frozen)
  • 2 Tablespoons chopped green onions
  • 2 Tablespoons chopped cilantro
  • 1 diced avocado
  • 1 lime
  • 2 teaspoons olive oil (not pictured)
  • Salt, pepper & hot sauce to taste

Note, the above ingredients are merely suggestions. This is the ultimate "eyeball" recipe where you can easily adjust the quantity for what you need.  I just made it for dinner one night, so increase everything to make it party size!

Begin by drizzling olive oil over the corn and stirring until the kernels are lightly coated.Spread the corn on a cookie sheet and broil for 5 minutes or until lightly browned.While the corn is roasting, prep the onions, cilantro and avocado.Allow the corn to cool then gently toss all of the ingredients together. Taste as you go and add salt, pepper and lime until you're happy with the mix. For me, the correct seasoning ALWAYS involves a little Tapatio!Serve in a pretty bowl next to tortilla chips (homemade version here!).In the unlikely event that you have leftovers, toss them on a taco or salad.  (You're keeping up a pantry ready for Mexican food at any time, correct?)Now you are officially set for watching  Superbowl commercials!
